Hi Gloria, do you have recipes or ways of fixing rhubarb to make it diabetic friendly? I don’t like to use artificial sweeteners but maybe I have to with this?

Thanks Linda, glad you like the website! That is why many people add sweet strawberries to rhubarb. Mix the rhubarb half and half with a sweeter fruit and then just use a little sugar. Adding cinnamon also enhances the sweet taste. Many people are now using Truvia which is not an artificial sweetener but is made from an herb. Try it in just a little something to see how you like it.
